Your lunchbox makeover.
Nutritious, delicious & easy lunches that are NOT pinterest-y.
Hi Reader,
I am BACK!
I have been OOO for weeks on end, and finally out of summer-schedule.
Here I am at the top of Lake Chelan, in a place called Stehekin. See, this New Yawka goes into the wild, too!
AND... As we settle back into school soon, and regular work days, one question keeps coming up in sessions and emails:
“Why is lunch always the thing that falls apart?”
I am going to tell you why... Your lunch kinda sucks. LOL!
Not trying to be mean here, but if you do not like your lunch - if your lunch is not enjoyable - guess what happens? You’ll just search for something that IS enjoyable (on top of that unenjoyable lunch you just ate).
NOPE. It doesn’t have to be that way.
Here are 3 ways to make lunch a little easier (and a lot more enjoyable):
✅ 1. Start with what’s already familiar Now’s not the time to introduce kale chips or that turmeric hummus you saw on TikTok. Start with foods you (or your kids) will actually eat.
✅ 2. Balance doesn’t have to be complicated A solid lunch can be as simple as:
A protein (like deli meat, yogurt, or eggs)
A carb (crackers, bread, pasta salad)
A fruit or veggie (even just one!)
A little something fun (cookie, chips, chocolate square)
✅ 3. Yes, packaged foods count Applesauce pouches are fruit. Cheese sticks are protein. Crackers are carbs. Ultra-processed foods are often what make lunch possible.
They’re part of a real-life, sustainable approach - not something to feel bad about eating.
